When setting up your brackets make sure you have the "Minimum rest:" field set correctly.  This sets all brackets on the window that appears when you click "File", "New...", "Create from scratch".  It also can be set on a per-bracket basis via the that appears when you click "Bracket list".

If you are running a high school tournament, NFHS rules require 45 minutes between matches.  Make sure the field reads "45".  If you are running for younger wrestlers, make sure this is set to the appropriate rest in minutes or blank to indicate no minimum rest time.
